Mmm … you could! Some soy bacon? I know Jim came up with a gluten free version too … I haven’t tried baking them that way but I’ll see if he’ll let me post it.

Very pretty, and who doesn’t love the idea of a cupcake for breakfast. I’m thinking about trying this with fake bacon to make them vegetarian. Hmm…
